Wonderful, fat and juicy Scallops caught off Shetland in the cold clear Atlantic . These are non-soaked scallops with the coral still attached.
Try gently fried in butter for a classic flavour or fry off some chorizo, remove from the pan once browned and add the scallops to the chorizo oil and cook for a few minutes either side, serve on a green salad for an alternative take on surf & turf.
